Peanut Butter Energy Bites

This no bake recipe for peanut butter energy bites is simple and quick- even kids can make it. It will give you a mix of proteins, fats, and carbs. A perfect after school snack. The peanut butter bites can also be made in bulk and frozen. We love this healthy snack for our family.

I love this quick recipe, mostly because it has wholesome, real ingredients in it. It is a great snack to have on hand for after school when kids are hungry but dinner is still hours away. It is delicious and also healthy in a few sneaky ways. In a pinch, you can use those as a quick breakfast that will maintain blood sugar and mood all morning long.

Ingredients

Oatmeal– I use organic, old-fashion oats for these peanut butter energy bites. You can use quick oats if you prefer a smaller texture.

Peanut Butter- I love the organic peanut butter from Costco – it has 2 ingredients: peanuts and sea salt. No added seed or hydrogenated oils and no sugar added.

Honey– If you have access to local honey, definitely use that!

Sliced Almonds– You can chop your own or purchased already sliced almonds.

Chia Seeds– Chia seeds contain about 2.5 grams of omega-3 per tablespoon. They also add fiber to your energy bites.

Flaxseeds– I like to add flaxseeds to many recipes. They are another source of omega 3 and fiber.

Chocolate chips- I use semi-sweet chocolate chips from Aldi for the perfect sweetness. You can substitute mini chips for more even distribution or dark chocolate for a less sweet option.

Peanut Butter Energy Bites

A delicious snack packed with whole ingredients, including old-fashion oats, peanut butter, and almonds. It is a great snack for kids and adults and very easy to make.

Equipment

  • 1 Stand Mixer You can also use a food processor or electric hand mixer.

Ingredients
  

  • 2 cups old-fashion oats
  • 1 cup organic peanut butter
  • 1/2 cup honey
  • 2 tbsp chia seeds
  • 1/4 cup milled flaxseeds
  • 1/2 cup sliced almonds
  • 3/4 cup semi-sweet chocolate chips

Instructions
 

  • Gather and measure all the ingredients.
  • Combine in the stand mixer with the paddle attachment.
  • Once well mixed, roll into bite-size balls.
  • Refrigerate and enjoy within a week or two.
  • Freeze if you wish

Notes

It is easier for me to gather all the ingredients first, to make sure I have everything on hand. You can get the kids involved with measuring and adding ingredients. 
You can wait until the end to add the chocolate chips. I don’t see a huge difference, so I simply add everything at once. 
If you want easier clean up, put the dry ingredients first (like the oats). If you start with the honey, it might just stick to the bottom.
If the mixture is too crumbly, add more honey. If it’s too sticky, add more oats or flaxseeds.
Rolling is the longest part of this process. Once they are rolled, you can stick the peanut butter energy bites in the refrigerator to firm up. I put them in a glass, airtight container.
A batch of these usually doesn’t last more than a day or two in our house. I would recommend eating them within a week.
If you like to meal prep, you can freeze them for up to 3 months in an airtight container.

    • Absolutely! As long as you include a nut butter and a dry ingredient for texture, your bites should hold together. You’ll also want a liquid or “sticky” ingredient to help bind everything together. Feel free to mix and match!

    • I would probably use them up within a week. If you need to, you can always freeze them. I personally don’t eat them frozen, but they taste great once thawed.
  • Do I need a stand mixer?
    • A stand mixer is great, but you can make these energy bites even if you don’t own one. A food processor or electric hand mixer would work too.
